I play games mostly for story and exploration. I don't particularly care for combat difficulty. I know that some people are interested in a good challenge, but I'm not. Therefore, how should a player like me approach the Baldur's Gate series? I basically want a smooth playthrough that will allow me to roleplay in whatever way that I want without getting bogged down in combat difficulty.

You could turn the game difficulty down to make fights easier.

OK first off, install the official patch and the BG2 fixpack if you haven't already. Particularly if you plan to play any of the vanilla romances, which bug out pretty easily, but it makes the game more stable overall.

The simplest way to have an easy life is to use shadowkeeper to boost your XP, stats & hit points, cheat in a load of cash, and some uber gear. 6 rings of gaxx RING39 are a fair start. The item upgrade mod also allows you to build some super-powerful stuff, or you can just buy it from the underrepresented items mod merchant.

Are you adding any npc mods? If you haven't played BG2 before you can get by for several runs on the vanilla npcs, but eventually you're gonna want more. The Imoen romance is pretty cool, and the Solaufein mod is worth at least one playthrough. The longer road is also pretty good, but it only kicks in at the start of ToB, so not for everyone. The Nalia romance is also worth a go, and I quite like Keto the bard. If you want to play evil, Kido is .. well too nasty for me, but whatever floats your boat. Angelo is delightfully and shamelessly mercenary, he was a henchman of your main adversary in BG1, but the mod allows you to add him in BG2. There are lots of others.

EDIT Damn, sorry, I see this is the BG1 forum. Do you have vanilla BG1, or are you running BG1 using the BG2 engine? The BG1 save editor is called gatekeeper, the BG2 save editor is called shadowkeeper.

The BG2 engine is far more suitable for story-style play, so if you have vanilla BG1, consider getting BG2 as well.

As you are in to role play, install Tutu or BGT so that you can have BG1 NPC project.
