And for hair? I like the short hair from DA2, what divides from the right side on top of the head. It's the shortest one. I always thought it was silly that you couldn't pick the "trailer hair" from DA:0, because that was awesome hairstyle.

For women, I like:
-Morrigan
-DefaultHawke
-Elf fauxhawk thing (though i couldn't have any of these three).
-Cassandra
-Merrill/Shianni (though only on elves, really because it accentuates the ears)
-Leliana (the version with more braids, Anders' elf-friend in Awakening had the style)
-Wynne (and the longer version in DA2)
-Lilley of the Coterie (and the straight version of that style)
-DA2 female version of the Riordan.
-The version of Aveline's hair with an asymmetrical fringe.
-Tallis' was also nice.
-I liked the short hair for a dark-skinned Bethany, with the fringe, but I think it needed to be thicker at the sides to look less like a bowl cut. from the front, you couldn't see the that the hair was longer than the fringe section.
For the men, I like:
-Duncan/Awakening Anders
-Zevran/Riordan/Nathaniel
-Daveth/Stroud
-The slightly more toned down version of Saemus/East Asian Carver's hair.
-Anders/Varric's was nice too
-Default male Hawke
-Fenris' hairstyle
The men could use better beards though. The most I ever give them is stubble (and sideburns on one occasion).
The only styles I didn't like were the ones Jowan's girlfriend had, Anora, Branka/Sigrun/Dagna, some of mamaHawke's styles, the weird dreadlocks a dark-skinned Carver sometimes has, the receding hairline style for men, Emile de Launcet's, or the various homeless-person styles (Irving, Jowan, etc).

My King Cousland was very much a 'noble barbarian' type and I wanted his looks to reflect that.

and here is a Hawke I made along the same lines of appearance. The problem with DA2 is the stubble options were extremely limited and made my Hawke's look sort of prepubescents trying to grow a beard. Fortunately I found a mod that adds some simple scars to the features and includes some with scruff. Adding that to what the game gives you improves your options immensely.

I also like using "Fergus' hairdo" for men as well. I've never used beards. I've looked at them but been mostly disappointed in the look. They don't mesh well with the face or else look fake, like someone glued them on with makeup effects.
My favorite 'do for ladies was either the "Anora" style which I felt fit well for a sword wielding warrior queen or the little short bob with like a dozen braids in it (Oriana's hairdo) that I would use for my mages. Then i added tons of mods to both games and went nuts with the ladies' hairs. My usual favorites ended up being short bobs or ponytails for most of my LadyWardens and LadyHawkes.

As for the my female protagonists, I don't think I have a favourite hairstyle for them. I wouldn't mind having the option of Morrigan's hairstyle though.

Otherwise. Well, what my avatar right now is wearing pleases me, on a male human in Origins anyway. Closest I could get to a full beard that's still kept short. DA2 let me have a more "proper" beard, not this three-day stubble. (Having started up Origins somewhat recently, I get a feeling that I'm talking about "Duncan's Beard".
I somewhat liked the Lemmy-style beard, although the moustache seemed a little too long. A proper Lemmy's got hairs of mostly even length, not a long moustache that'll need a net to keep out of the way when eating soup.
Hmm. Well, playing a woman, I've mostly always gone for the shorter styles. Bald, even, or with just very short stubble. Don't know why, but I felt it just fit my dwarf commoner warrior (recent outbreak of lice infestation or something - I figured most other origins could afford to get a wig in such a case).

For males, probably Zevran's/Riordan's. All the breards look wierd to me so I avoid them; they don't look attached to the face, and the way hair is done in general doesn't stand up well to close inspection, which isn't such an issue for head hair but it's hard not to stare at the sheets that make up the hair when it's around the mouth. At least I think so.

In DA:O my main was a male human noble. He had the chinstrap style beard and the hair pulled back in a braided pony tall.

Skin is (I think) Dracomies textures as is the eye texture. Hair is Pineappletree's coloring. Hair itself is a standard "King Cailan/Zevran/Riordan" cut. The armor is the Grey Warden Runic armor in black (available on nexus).
The rest was just made up off the standard human facial set that pops when you first open it (the toolset) to create a morph.
