I'm starting another playthrough of ME1 and sadly it's been far too long. I'm looking for a list of the assignments or people you talk to that are consequential, mentioned or anything like that again in the rest of the series.
Is there a list of things that have consequences or are even brought up again?

I'll try to help you off the top of my head. Sorry if I'm late (been surprisingly busy these past couple days):
Shiala on Feros: let her live and she will return in ME2 on Illium.
Rachni Queen: Live or die, has greater consquences in ME3 than ME2.
Conrad Verner: Talk to him three times without scaring him away and he'll be at Illium's bar, Eternity.
Gianna Parisini: Help her bust Anolais on Noveria and she will be there on Illium.
Fist: Don't bring Wrex to kill him in ME1 and he'll make a cameo in Afterlife on Omega.
Helena Blake: Take her bribe and she'll have a cameo in Afterlife.
Wrex: If you don't shoot him on Virmire he will come back as head of Urdnot clan on Tuchanka.
Rana Thanoptis (sp?): Let her go on Virmire and she'll be in Okeer's lab on Korlus.
Kirrahe: If you can have him survive Virmire he will be there in ME3 and Mordin will speak of him in ME2.
Kaidan/Ashley: I'm sure you remember the choice, whoever you choose will continue on through the series and the other goes up in smoke.
The Council: If you save them they'll be in the next two, otherwise a new council will be seen in ME3.
The evil reporter chick (whose name I won't even attempt to spell): will want to interview you again at the Citadel.
Can't remember anymore. Hope this helps some. Also, most of what I posted relates primarily to ME2. I've been trying to block out ME3 for my mental well being.

As long as Gianna Parsini is alive, she will be on Illium. Her reaction to you wll be different depending on how you handled Anoleas. Note that it is possible to get Parsini killed on Noveria.ViciousCargo wrote...

As long as you do not kill Helena Blake, she will be in Afterlife. Her reasons for being on Omega are different depeding on whether you took her bribe or convinced her to disband the gang.
There are some Mass Effect checklists that may provide information about some choices or decisions that carry over across games.

Thanks guys, I actually went ahead and played ME1, but I think I might do it again, the game is just too good. And thanks ViciousCargo, I dig yours too. 
Thanks for the link RedCaesar, sadly it isn't terribly accurate as far as putting the ME2 logo on assignments that are mentioned/relevant again. Reporter's Request for example doesn't have the ME2 logo next to it, but Wong sends you an email in ME2 if you visited her and did her quests. That's kind of what I'm looking for, all the small barely noticeable things that you get if you did those assignments or did them correctly in ME1.

Pretty much any quest you do in ME1 is rewarded with a cutscene or at least an e-mail in ME2 or 3. I generally find that paragons are most interesting for complete trilogy playthroughs, because Renegade's kill everyone and everything(therefore being left out of the later games).
