Like I chose mine based on how my character would feel not on stats. Like if I have an "evil" character I chose Sten, Morrigan, and the elf guy as my compainions. But when I was good I chose Alister, Wyne, and Lilieana. Then for weapons if I chose the human royality I would use the all the cousland weapons. How about you peole?
How did you choose your compainions, weapons and armor

Depends, I've made so many Wardens at this point. If I play on nightmare I build my party to compliment one another in terms of skills and tactics, but after awhile I started noticing I had patterns when I played DA:O and missed out of some good party banter. Now when I play I go for more fun/role playing than maximizing anything. I recently had my first play through using Sten the entire game, so I actually got to see and hear some new stuff even after putting hundreds of hours into this game over a few years time. I also brought Morrigan and Zevran...which resulted in some of the most hilarious banter in the game.

I always choose go with Alistair, Leliana, and Morrigan. (basically the "same" playthrough multiple times...just more refined each time)
As for the armor and weapons...I go by the look...nothing else...and I never wear helmets.
My Warden - Dual Wield Warrior - I use the Forgotten Equipment Medium Armor mod...and dual Chevalier Longswords from Raptures Weapons mod (which I headcanon as the Cousland Blade).

Alistair - Keeps his original Splintmail armor throughout the game. Eventually uses Maric's Blade and Cailan's Shield. Uses Cailan's Armor during the Final Battle...after he is named King.
Leliana - Archer - Wears the chasind robes...then wears the gold and dark red Archon Robes from the circle tower. Scouts Bow.
Morrigan - Kahlan Amnell outfit mod.

Companions: Depended on the playthrough. My first few, I recruited everybody all the time and had no especial strategy for who was in the party. Later, I was more comfortable recruiting and building a party based more on RP concerns - although I confess to creating characters just to try out certain party dynamics. I've got an all-Oghren, all-the-time game on hold, and like Bob Garbage, I'm seeing stuff I'd never seen before (I typically do Orzammar last, not first).
Armor and Weapons: Eh. First few games, I tried to assign stuff that had good stats to people. Got more flexible later - king!Alistair wears Cailan's armor from Ostagar, while Warden!Alistair wears the WC armor from Soldier's Peak or else the Duncan's robe mod.
But my Dalish Warden was the most fussy - she wore only plain Dalish leather armor the whole game (highest Tier she could get, but still) and used only Dalish weapons. They could be special weapons, like the Veshaille, but had to be of elven make according to their flavor text. She also bought every elven item she could find and resold them to Varathorn, and destroyed all looted darkspawn gear. Because of the taint, you know.
She did wear the shemlen Blackblade armor very briefly in Awakening, in the Silverite Mine, until she could get her own stuff back. But she was very grumpy about it.

I largely base my Warden and my companions armor on what I haven't done before, with the way I'm playing the Warden coming in a close second in terms of how I equip the Warden in particular. (An exception is Leiliana, since I have the Devout Armor mod and see no reason to equip her in anything else except insofar as I missed the armor in that particular playthrough.)

I used to pick everyone except Zevran,
but Sten keep disturbing me in camp so now i skip him too.
Weapons & armor: the best there is stats wise

I love the Blackblade armor. (need to get the invisible helmet mod). Use Starfang and bloodblight
duel wielder will end up with Duncan's blade, Alistair ends up with Duncan's blade and shield.
