I have read through my codex and DAO Wiki and I can't find out how to actually get Morrigan to craft potions.... help would be appreciated!

Down at the bottom in the toolbar, you will see a green leaf. Click on that and it takes you to the crafting screen. Then you can craft away.
Your rogue will have the icon for posion in that lockbar also

The toolbar? I am playing it on the 360... so I am not sure where the toolbar is???

where you activate your spells, there should be one for herbalism there -- activate that and it brings up the screen for it

Just to specify: Pull the left trigger; doing this will bring up the radial menu - from here, at 9 o'clock is the potions radial menu, and in here, at I think 10 o'clock (could be 9) is the green leaf that is the symbol for potion crafting.
Make sure you have switched to playing Morrigan before you do this.
From the Herbalism screen you will be able to create any potions you have the recipe/skill/components for.
