 Spoiler needed:

I haven’t played this game in years. Can a female mage get Alistair
to do the dark promise ritual if he isn’t hardened? My guess is no and if
romanced Alistair sacrifices himself yes or no? I’m planning on making him a
Warden and importing this play through to DA2. All my other play through Alistair
is King. What are the steps? What is the ending?

Hardening Alistair is not necessary for him to agree to DR.

If romanced, Alistair will sacrifice himself if you take him with you to battle archdemon.

To make Alistair end as a Warden is easy - just execute Loghain and put Anora on the throne alone. Then do the DR (for which hardening Alistair is not required). Job done.

Does an unharden Alistair stay with the Wardens over a long period of time and show up in DA2?

Yes, you get a Warden Alistair cameo in DA2.

Fun fact -- it's quite a bit easier for a female whom Alistair is in love or still in love with to convince him to do the ritual with Morrigan than it is if he's not in love.
