I'm going to hold out on this playthrough until after the Landsmeet so I can get that embarassed dialogue I've heard about. So cute. However, I've played a few female characters in romances with Alistair (he's so addictive), and there are some trade-offs in the tent scene/love declaration.
If you're going to make him king, you really do need to harden him; however, if you harden him and don't initiate the tent scene yourself, you don't get a very fulfilling declaration of love (just the, "Before we go, have I told you that I love you? I did? Well, it won't kill you to hear it again."). If you initiate the tent scene instead of waiting for him, you'll get the proposition scene when he's in love with you after you do his personal quest, and it will be him declaring his love for you instead of asking you to spend the night. This is also where he'll say you're the only woman he's been with, and if he has his way, the last.
Alternatively, if he's at Love with you after he sees Goldanna and you choose NOT to harden him in the follow-up conversation, he'll declare his love in that conversation.
Can't have your cake and eat it too. But I much prefer the more mature "hardened" Alistair. Very take charge at the Landsmeet.
Already done his personal quest and hardened him, but I wasn't aware that the proposition scene was different depending on that. Good thing I have a save point right before it!
I LOVE it when he says "You're the first woman I've EVER spent the night with...and if I have my way, you'll be the last." I got that with my Dalish elf since he was unhardened, and wasn't aware that you could still get it if he did the propositioning. Off to try it when I get home!

Yeah, that's if you choose the "First smart comment and I'll feed them to the darkspawn" response. He says it, but it's not a serious, full-out declaration. The other discussions I mentioned, he comes out and says it without joking around...which is rare, for him.
Anyway, yes, enough Alistair romance talk.
More hidden dialogue options?
There are some good ones if you have a very high Cunning skill. For example, you get another dialogue option in the Tower of Ishal where you wonder how the darkspawn knew to attack the tower. You also get a funny response to Alistair's "raised by dogs" conversation.
....Aaaaand we're right back to Alistair. Sigh.

Oh, I know. Everyone goes on about the tough moral choices the game challenges you with, but really, this is the toughest decision in Ferelden.

Oghren's drunk camp-time dialogue is pure gold. The joke he tries to tell but can't because he's laughing too hard makes ME laugh every single time. I think there are a couple of instances where he refers to his pants, which he thinks the dog has stolen. And let's not forget the "Where do I get some sauce for that rump roast?" comment; I love how the response to that can be "Right here, you mad dwarven stallion"...which he approves, of course, right before passing out.

I believe he has many. That "tell me about something you mentioned" option is apparently meant to be used after his casual comments when he's in your party...eschilde wrote...

Also, I once got a conversation in camp where a drunken Oghren mistakes you for Hespith and yells at you. I didn't get it on my next playthrough (first was Dwarf Noble, second was elf mage), so I assume it's female dwarf specific.
I'm also rather fond of the "(strength) punch the guard the hell out" option when you're in Fort Drakon.

He's quite forward with a mage, too! One of the responses is different: when he asks if you're married, you have an option to say "I'm a mage," and Teagan says that it's not forbidden for mages to marry. Then you say something about a man having to be very brave to marry a mage and he says "I could think of several reasons why one would be so brave" before backing down and apologizing for being forward.
Elves in general, and Dalish elves in particular, get different dialogue in quite a few situations. There's the boatman at the Circle Tower, who keeps saying insulting things about elves (Dalish or City, doesn't matter) and then tries to excuse himself by saying "but I don't mean anything bad by it." There's also Leliana's comments on the Dalish where you can call her out for being ignorant, but that's pretty well known. Talking to Ser Donall in Lothering about the Urn of Sacred Ashes, he'll be a little surprised that you don't already know about it and you can say that the Dalish don't really learn much about his religion. Or, after talking to Alistair about Duncan and how Alistair wants to put up some kind of memorial, he'll ask about the Dalish way of honoring their dead. Little stuff like that.

I haven't gotten that one, either! I know high DEX characters have a different option instead--I wonder what characters with neither high STR or DEX end up with? My mage hasn't gotten to that point yet.

Has anyone propositioned Morrigan, instead of her propositioning you? It is easy to get her approval high enough in Lothering that she invites you first time you talk to her in camp, but if you refuse her/dont have enough influence and initiate it youself later it is VERYdifferent.
