 Because everyone in the game is in shape.
Shepard's in shape even if he gets a little soft around the edges. 
All Asari are in shape. It would have been awesome to see a fat Asari... or perhaps even seing Aria like a Fat lady of crime. Like Jabba the Hutt.
The Quarians are in shape... dem jiggly bum bums. 
The Turians are in shape... they have flexibility and reach. 
The old people of earth are in shape. Udina is in shape. Chawkas is in shape. Damn, i want to be a senile with THAT kind of body. 
Sexbots are in shape.
Even Pilots with Vrolik syndrome are in shape. 

Or perhaps there is a codex entry i am missing? Explaining how every being in MEU is in good shape.

Originally, there were only two human character models: male and female. In the sequels, they gave some characters unique models but kept the generic two models for non-squadmate NPCs. I guess they thought designing additional models was a very low priority.

They use presets. Much like Fallout, everyone is in shape, even the old people. Creating different body types for each and every character, major and minor, would use up way to much memory. They already had to remove holistering your weapon due to memory limit. Even if they could, I doubt they would, people don't want to see obsese people in a video game.

asides from gameplay limitations( body presets) it would make sense that with advances in medicine, science biotic, tech and cybernetic implants being fat is something we would overcome, the books speak how there are very few desieses in the universe, cancer is not an issue, liver cirosis and what not, i mean if Humanity masters space travel it would make sense we also mastered our own body....

P.S. 40 Situps a day doesnt rlly require much... i dont get how people allow themselves to get overweight(unless its medical) nowadays... cant imagine it in the future

Well you gotta figure, the major contributing factors of obesity -- sedentary lifestyles and junk foods -- are probably a thing of the past. Even if you live in whatever passes for food deserts in the MEU, you're likely getting what you need to survive, with proper safety and additive regulation, and in proper portions.

The places we've visited throughout the vast majority of the story are hubs for space travel.

It is because situps are actually a really minimal calorie burning activity.  Plus, there is mounting evidence that sugar overconsumption leads to obsesity and diabeters (not purely correlative, but actually causivtive there is a recent article on PLoS about it).  Plus, once you gain weight and lose it again your body is permanently stuck in a lower calorie metabolism.  It kicks in after you lose 10% of your body weight (or was it 20%?).  So if you ever gain significant weight, if you lose it (returning to your original weight) then you have to eat less calories to maintain your weight than you would have needed to before the weight gain.  This effect appears to last for 10 years, maybe permanent, and is probably why the vast majority of people who lose weight gain it back (and then some) after 4 years (most people gain it back after 6 months).

Losing the weight itself isn't so hard, but keeping it off can be.

BTW, the majority are soldiers. They are expected to be in great shape. As for civilians...people don't like fat people.
