Unfortunately there isn't a way of explaining it without sounding snarky, and I'm very disappointed that the writing took that direction (that it doesn't actually have to make any sense just as long as it has the look and feel that they wanted).

& much more but no organic energy. it's BS

Energy is mass * a catalyst for conversion (to energy).

Organic energy = Shepard's body into the current running through the Crucible.

Well humans are energy electrical and chemical. We store massive amounts of it. I'm assuming that's true of other species as well hence "organic energy".

I hate when he says this because yes you can find out a lot about a person through their DNA like where they lived for example, but no your memories are stored within neurons in your brain not DNA.

Nonsense.  You have a soul.  Which is like a little ghost that lives inside you.  And it, like, rises up to the sky when you die.  Or evil creatures suck it out of your body.  Or it flies around in the wind, howling.  Or, in the case of Mass Effect 3, goes into a giant soul blender which blasts it out so every other soul gets a little fragment of your soul ghost stuck to it.  And becomes a part of it.  And that's why you have an electronic face when it is all done.  Because, souls are awesome like that.
