I really don't think Garrus views Shepard as a trophy or anything like that. I think they are just in a more 'advanced' stage in their relationship than a lot of other ship couples. With maybe only a few exceptions, Garrus and Shepard don't really have that many issues. And mind you, I'm not saying this makes them better than any of the other romances- its just a different 'note' they have. Just like Shepard/Kaidan gets the 'will-they-won't-they' tension.
The only real problem they face is the war, and the fact that they aren't the same species. In Kaidan's romance, for instance, you are still building back trust. Steve/Samantha are relatively new. Tali arrives a bit later on the ship. Liara is a bit harder to pin down, but she's a bit more solitary.
With Garrus and Shepard though...most of the obstacles are conquered before they even start dating. They're already good friends. There's no getting to know you phase, or mistrust. Even before locking in the romance, you get the implication they're still sleeping together, so not even sex is really that big of a deal to them.
Narratively, Shepard/Garrus in the DLC are written as a generally happy couple that's well aware of how unusual they are. I think its pretty telling that Shepard wanted to reenact what a 'first date' would be like between them. They never got that flirty dating period. I don't think either of them actually wants to change how they met- but its nice to pretend you are normal for a change.
A lot of Garrus' dialogue throughout ME3 implies he's looking at the big picture of their relationship. He thinks about kids, he worries about Shepard. To Garrus, I think Shepard stands for a lot of things he wants after the war.
The second reason is that, after the popularity of the romance, a lot of people DID want to know if they had sex like normal people. Garrus says he's not attracted to humans- does that mean he doesn't really 'like' Shepard that way? This DLC says, yes, he does. Shepard and Garrus reject their more natural opposites [Vega for Femshep, and the female turian for Garrus] and are quite happy with each other.
That's how I took it at least.
