What class should I try next?

If I do another playthrough of ME3, I'd like to try a new class.

So far I've done Adept, Vanguard, and Engineer.  Vanguard was probably the most fun because CHARGE.

That leaves Soldier, Infiltrator, and Sentinel.

Which is the most fun?  Assume Normal or even Casual difficulty; I beat ME2 on Insanity as an Adept and don't have much motivation to play on hard mode again.

I'd say Infiltrator or Soldier. I like Sentinels, but a power-heavy Sentinel really just is a cross between Engineer and Adept; while a Assault Sentinel doesn't work as marvelous in ME3 as he did in 2. Would be rather similar to a Vanguard without charge anyway.
Infiltrator's tactical cloak is great for sniping, or other little tricks. It makes the Infi a very distinct class you should probably play at one point.
Soldiers are much fun to me. Sometimes not relying on powers but just shooting the boogeyman in the face is great. Soldiers still are the best for that (even with Adrenaline rush not being as insane as in ME2. Explosive burst indendiary ammo on fast firing assault rifles makes up for that).

Thanks.  I've done Infiltrator on 1 and 2, enjoyed it both times.  What are the best sniper rifles to experiment with?

Sentinel was neat in ME2 because of the pure survivability and exploding armor but it sounds like it was nerfed a bit.

The one time I played Soldier in ME2, I remember running out of ammo at the final fight due to the lack of ammo drops, and having to use squad powers to kill the not-just-any-reaper-a-human-reaper.  It doesn't look like that is as much of a problem in ME3 due to the ammo capacity upgrades and more ammo drops at boss fights, but running out at the final stand at Priority:Earth would mean almost certain death.

Check out Kronner's Sentinel build: "Biotic Bomber and Walking Armory"

It allows you to carry any weapon(s) you want in any combination, create biotic explosions relatively quickly, and with lots of damage protection. Though take note that proper squadmates are essential to playing this particular build correctly.

Depends on you. Personally, I perform bad with single shot weapons. Always seem to miss. Takes ages to get the Widow anyway. If you have the Collector's Edition, the Valiant is a fine weapon, if you save up a bit, the Black Widow is great.

Tech Armor doesn't restore your shields when breaking now. However, taking Defense Matrix as a bonus power allows you to restore them yourself. And the two stack, if I remember correctly. With a light weapon loadout, the cooldowns would still be managable.

Yeah, ME2's constant ammo shortage is history. Didn't have any trouble with this in ME3, even without capacity upgrades. Just don't use the Harrier...
Taking Energy Drain (or maybe Carnage) as bonus power could help too. You can spec Adrenaline Rush so that you can fire one power, so it would be useful most times.

Soldier will be the most different from what you have done already.

Adept and Sentinel trend towards the same playstyle, and Infiltrator trends to a more powerful Engineer (ignoring pure drone / turret builds).

All of the classes are worth playing, for the most part, though.

As for ME2... in the last fight Harbinger drops a large ammo container when he dies IIRC. And the last part of Defend the Missiles doesn't require you to actually kill anything. ;)
