Why is the Archdemon always refered to as a 'he', if winged dragons are female?
So winged dragons are female right? Then why is...

I have always taken the Archdemon for being a female dragon, never noticed that they said it was a he, lol.

While the Archdemon might indeed be female, lore says that they are the "Old Gods" of the Tevinter Imperium, which seems to imply to me that they are something more than mere dragons. Dumath the Silent One, for instance, usually seems to be referred to as male. So maybe the Old Gods are dragon-shaped but not just dragons, and thus could be male as well.

So, Old Gods are gods in dragon form, or special dragons, or what?

I believe all the of Old Gods were "male". In that is how they were referred to in lore, but who knows if anybody ever actually did a gender check.

Only Gaider and a select few of the writing staff knows.
And they won't tell, bastards.

Correct. The archdemon resembles a dragon but is not a dragon itself.

From what I gather from lore, the Archdemon/Old God *MAY* be an ancient dragon, or something else that took the form of an ancient dragon. When the dragon is killed by a non-Grey Warden, it's soul moves into the closest darkspawn, and I think that darkspawn turns into a big dragon.
So, I guess the question is, do souls have gender? If Flemeth or Morrigan took over a guy's body, would they be men now?

It could just be a powerful darkspawn/demon king/queen in a dragon suit.

I don't think it matters. The dating scene for Archdemons is rather limited.

Ruck refers to it as being male. I just figured it was because it was a Old God and not a High Dragon.

There are some places where the Archdaemon is referred to as male by characters, but the lore seems to be very consistent:
- All High Dragons are female; males never get larger than Drakes (which are all male)
- Seven ancient High Dragons were the Old Gods, and were all female.
- This is (was) the fifth Blight, so only two more Old Gods left.

Either is possible. Maybe the Old Gods were born with a mutation that switched on the genes that cause wing development in females (or switched off the ones that prevent it in males). Maybe they belonged to a different species of dragon where both sexes were winged, which has been driven to extinction since by those Nevarran dragon hunters. Who knows...

The Old Gods may not have naturally had wings - those could be an aspect of the corruption worked in them before they rise for a Blight.
Alternatively, I suspect that gods, demons, or just dragons, there must have been something peculiar about the Old Gods for them to have been worshipped so particularly by the Imperium (afterall Tevinter was surely more than a mere run of the mill Dragon Cult), and the wings might reflect that.

Witherfang is a male wolf.
Its bound spirit is female.
The Old Gods could be the reverse.

I imagine that is what makes the old gods stand out from regular High dragons.
I am fairly certain they know what gender the old gods were because . . . well, Dragons are pretty damn big and they don't exactly wear clothes.

Because he's Urthemiel, the god of beauty.

Transsexual or transgender, 'tranny' is a derogatory term.

Ah yes . . . fight the Darkspawn, resolve the difficulties of Ferelden, defeat the traitor Loghain, and then go slay the Transexual dragon.
Marvelous really.

Or maybe dragons are just hermaphrodites like snails, male and female at the same time

Genderless perhaps?
More spirit then living creature?
That would be my guess.

The winged dragon is the most magnificent and beautiful creature in DA:O, and so probably the only form worthy of the "old gods'" pride.
