Also, Final Fantasy VI on current gen home consoles. Because it really is the best of the bunch, along with IX and X.

Every individual party member was fully fleshed out. I was immensely attached to all of them.
One particular highlight is Celes' opera scene for me.

Oh. Damn. I was thinking the original Deus Ex when I read the thread title. So...
Planescape Torment. Keep all the dialogue as it is, just make the gameplay more fluid and easier to get into. Keep the stats, too. A proper RPG needs stats.
Man, I'd love to replay the game, I really do, but the gameplay is just keeping me away.
