I always play as a soldier (once as adept). I'm getting bored of the soldier route. Kind of boring for Shepard to be invincible.
I like the idea of playing a class that I have to be patient with and be forced to use all powers at my disposal.
Sniper Rifle/Pistol would be the weapons I use to finish. Would like the powers to be used beforehand.
I see a lot of good advice given to people who have an idea of what class they want to play but I really have no idea how the other classes play.
Which class would better suit me?

Sounds like an Engineer would be what you want (Sniper Rifles as a bonus power).

Yeah ME1 or ME2 makes a big difference since there are major changes in gameplay. If you're talking ME1 go with a sentinel or an engineer with a sniper bonus talent. For ME2 I'd either go with an engineer or adept with a sniper bonus on the disabled collector ship.

I played as an adept once and on 1-3 it was awesome but I had a hard time getting the hang of things in 2.
It'll be a play though the trilogy and from videos I've seen the gameplay changes a lot from 1-2-3. So which class (Engineer, Sentinel) plays better throughout?

For ME1 I'd say Sentinel with sniper rifle bonus talent. It's a caster class with almost al the best CC powers from both tech and biotics. It's probably about as far from the Soldier as your going to get. This also frees you up to take whatever squadmates you want on any mission, since you're self-sufficient.
In ME2 go with a caster Senitnel. The other option is Assault Sentinel, but that basically plays like a Soldier and is pretty much invincible. Caster Sentinel focuses on using Warp and Overload to strip defenses and Cryp Blast and Throw for CC, then using Warp bombs (with squad assistance) or gunfire to finish off. Take sniper rifles as your bonus on the Collector ship.
