So I still hate Ashley's makeover...

I think the engine renders faces in a more realistic way in ME3 than the previous games. That's probably what you're seeing. The only physical differences I can see (and I spend A LOT of time in CC's) are the lips (which are more inflated than the ME3 model) and the eye brows, which I think are the most dramatic differences between the two models.

Even though I think Ashley looks worse, I do kind of prefer how the most cast looks in the first game. Don't really know why, I guess because they look a little more authentic, and they don't wear needless amounts of makeup or stupid outfits. Just personal preference.

It is true though that the modern prohibition against beards in the military is linked to the possibility of chemical warfare. You need to be clean shaven in order to get a good seal on a gas mask. Any hairs poking out from under the mask is also going to allow outside unfiltered air in, which is not a good thing if that air contains mustard gas or something nastier, like a nerve agent.

That might not be an issue in the Mass Effect universe however, where people wear full helmets rather than a mask. Short, neatly-trimmed beards wouldn't be an issue, so military regulations may have changed to allow them.

I hesitate to use the word 'realistic', but I liked how all the human characters wore the same uniform, and the armor was all standardised, and the Normandy felt more like a military ship. 

Cohesive and consistent would be ways to describe it. The latter games feel a little more like the thrown together product of different groups of people concentrating on style and 'cool' rather than an authentic game world.

Does Ashley have a unique body model? I always thought it was the FemShep body model they used for her and every other humanoid female in the game.

There's is no body model actually, it's the clothes, armor, or uniform that the entity wears that determine the body features, being a long time modder, i've modded Miranda clothes onto Femshep in ME2, and it totally make Shepard look miranda with a different head, the point being that the way armor is desigend is how it will look on a character, in Ashley's case being very noticeable.

That's a generic model, albeit recoulerd for skin, much like the casual outfits.

This comparison really needs to be plastered on these threads every time the subject resurrects itself a new thread opens up. The only major difference between the two Ashleys is that she went from a B to a C cup (and if you really think about it, every female in ME1 had the same body model. When we get that specific, we're nitpicking) and that she let her hair down.

Although I'm in the camp of people that believe she should've tied it back into the bun when she's in armor and kept it loose in her casual, it's not that big of a deal.

Skin tone lightened? Well, so did Sheploo's. Nobody seems to care unless it's Ashley, though.

Imho, the new model is fine. Blue fits her well and so does her hair.

One of the first things I do in any playthrough of ME1 is immediately swap out the Phoenix armoy for the Scorpion armor you find in one of the crates on Eden Prime.

How about no? The trend in the series towards more overt sex appeal (sensible armour in me1 to stripper outfits in me3 with upgraded... assets) is still insulting.

This comparison really needs to be plastered on these threads

Is anyone complaining about her face? So what does a close-up of her face prove? Just look at the intro - Kaidan gets to wear the standard alliance uniform whilst they put Ash (and only her) in that silly catsuit.

I bet Jack's would look more masculine, more bulky, but in a light version... with some scars and graffiti, in relation to her "own armor and tattoos".

I dunno about bulky...Jack herself is pretty slender. I've never worn armor, but I'm guessing it's pretty heavy, and biotics would tire you out enough as it is.
