An older more experienced character can make decisions easier then someone with less experience depending on the situation.

I agree that this is what it should be like, but the story itself (at least in DA:O and DA2) hampers this. No matter what you make your Hawke look like, you cannot avoid the fact that you have a mother of a certain age, and twin siblings who are, I think, around 18-20 at the beginning of the game. You can certainly make your character look to be in his/her fifties but you have to deal with the immersion breakers, which not everyone can.
Personally, despite being 27, I want to play an older character for DA:I. To me it seems that being an Inquisitor and investigating all that's going on suits an older, veteran character. I'm just hoping that regardless of the default appearances for the PC, there's nothing in the story that limits the age, such as family members that tie the PC to a 20-something age range.

They'd have to make the backgrounds a lot less specific and detailed than any of their recent games have been to allow that.

I agree with this in general. There are some limitations to how that works, though, since our character so far has always been given some kind of background.
For instance, the game tells us that Hawke is older than Carver/Bethany and younger than Leandra. There's a window there that it's immersion-breaking to design your character outside of (unless you come up with some serious personal RP about magical accidents or physical augmentations or family lies and scandals and so forth). EDIT: to give credit to BigEvil for getting there first.
In DA:O the only origin I can think of without a strongly implied age window would be the Dalish Elf origin. And I could even be wrong about that one (I only played it once).
Not complaining since it's always worked out for me. Just commenting.
I'll never forget the tantrum my husband had when he realized his Cousland would look awkward with a grey beard and wrinkles standing next to his *big* brother Fergus.

I didn't hate the "And then 3 years went by! Fill in the blanks with your MIND!"-thing that DA2 presented, but it was obviously not the ideal solution we were all hoping for when we first heard of the time jumps. If my character ages I'd like to feel it.

Double post because this is awesome.
Every time we did a time skip in DAII, I went immediately to the Black Emporium to alter my character in some way so I could feel like time had actually passed. Would have been awesome if the CC/Mirror of Transformation screen could have popped up immediately following the previous act's final cutscene, though I realize that might have annoyed some players.
It only made sense to me that Hawke's hair might have grown out during her long trip into the Deep Roads. Or that she chopped it all off on the boat voyage from Ferelden to Kirkwall to avoid puking in it. Maybe she started wearing more makeup when she joined the Kirkwall nobility. Etc. etc.
