"Canon" in a sense that they're being used in trailers and promotional materials. In DAO, it was a warrior (Appropriate for a war-centric storyline), in DA2, it was a mage (Appropriate for a mage-templar comflict). In DAI, do you think they will use a rogue or should they use a rogue? I like the idea of a rogue as a main PC in the next game since I feel like the theme of the third game based on the leaked survey seem to be about investigation and maybe even infiltration. It would seem appropriate if rogue is the "canon" hero.
Gotta disagree with you about DA2. Near as I can tell, the 'canonical' (using the term extremely loosely mind you) Hawke was meant to be a Warrior probably with the Templar specialization (since Carver gets this if he survives). The plot and various interactions don't make very much sense (esp Act III but even earlier) unless you are a warrior that sides with the Templars (and sided with Meredith at the start of Act 3). The most obvious (but far from only) case of this is the ability of a mage-hawk as a newly arrived refugee to cast spells with impunity less than 100 yards from Meredith's office!
