Honestly, I have maybe one soldier playthrough, most of mine are one of three, Adept, sentinel or vanguard, and most of them are Femsheps, so honestly I take that "Chart" with a grain of salt
So only 8.2% played Adept and 18% played Female Shepard? Female Shepard was better.

Very true, it'll be kinda hard to account for every playthrough made by every ME players

It's only 18% because it's extremely difficult to create a Femshep that doesn't end up looking like some botched plastic surgery victim past the customization screen.

I had to go with Male Shep for all my current play-throughs mostly because of looks. I'm a straight female and I loved the fact that this RPG lets you be a powerful woman....but honestly I didn't want to look at that for several hours at a time, when Male Shep(default) seemed more appealing.
Of course I haven't been able to create a Male-shep that I liked either.
So default man-shep it is. (That hairline streak got me xD)
I will probably try a Fem-Shep my next playthrough though.
Onto the class stats.
Vangaurd is my go-to. I love Biotic Charge.
I have never played with a soldier, mostly because I would miss the powers that come with other classes.
But my current playthrough is an Adept, so we'll see how it goes.
I think some people just find a class they love, and stop expirimenting. Vangaurd was that for me, and I have to push myself to try the others.

I'm a girl and I play Female Shepard. I'm also one of the 8.2% as my main and favourite class in the Adept. For all those who think it's just biotic explosions and hiding in cover- they are so wrong. My weapons in ME3 include an assault rifle and heavy pistol only to take advantage of my cooldown, and Singularity (definition of shooting gallery) and Warp. I throw people around and biotic melee them to death.
Also use Barrier as your bonus power, you want it.
Maybe it is a harder class to master, I mean in higher difficulties you have to cling to cover more to cover but well worth it. I've never been able to stomach soldier playthroughs past the first game, I mean if I wanted to just shoot things I'd play Call of Duty.

I still like how Garrus has a higher survival rate than Liara despite her only being able to die in one way. Unless that's combat survival rate...

It probably just reflects the percentage of female videogame players in general.
Adept doesn't work because so many opponents can dodge your biotics (even if they see it coming from the corner of their eye, they have miraculous reflexes indeed); it's better to have Liara handle the biotic attacks.

I don't know the demographic of a game like mass effect, but I can tell you that I played as a male soldier Shepard because I like being a tank in video games. Additionally another reason I chose to be a male shepard was because I could customize him towards my ethnicity. I didn't see a lot of black male protagonist in video games, Mass Effect was so great to me because I could customize my character the way I saw fit.
I've personally never played as fem shepard or been any other class then a soldier.

Just because you like FemShep does not mean others do.
I like both Shepards but I play MaleShep more because I like to play as myself...it makes the decision making and relationships in ME more personal.. & since I am a guy..you get the idea.
My favorite class is Infiltrator & Engineer.
I don't like Adepts and Vanguards because in a sci fi game I prefer to play a tech oriented character as opposed to a magic oriented one. Also in most games I like to play as a rogue & the infiltrator comes closest to being a rogue in ME
