I'm actually more interested in the romances for the extra dialogue and depth they open up than for the romantic content per se. In ME2, it adds to the sense of Shepard's resilience if the LI is the Virmire Survivor, and perhaps to some extent Liara too, in that Shepard has to continue the mission without them and knowing that the relationship might well be broken. And in ME1, I really liked the scene where Shepard talks with the LI about having stolen the Normandy to go after Saren. In fact, it really annoys me that it just doesn't happen if you aren't romancing anybody at the time. The first part of it still could have made sense with a non-romanced squadmate, just like the scene at Shepard's locker after the Normandy gets grounded.
Anyway, I mostly see the romances as just another narrative choice to explore. I guess I felt some investment in the MShep/Tali romance, but I also felt like it didn't quite work. Tali looks up to Shepard so much that it didn't feel like a true relationship of equals. Also, the dialogue choices for achieving geth/quarian peace in ME3 work fine if Shepard *isn't* romancing Tali, but if he is, he may be making a life-and-death decision for the most important person in his life, and the dialogue doesn't really capture that.
