Baldur's Gate always come up as the heaven of RPG's on the DA forums so I thought I'd buy the 1+2 collection and see for myself.
So, any things I should be aware of before embarking? Any bugs or unknowable gameplay mechanics?
Any tendencies I should look out for?

Install to somewhere other than the default location so Windows (Vista/7 and probably 8) doesn't start messing with compatibility files, c:\\games\\... is a good option.
A full install is best to minimise disk swapping.
Trying a full install of BG1 may produce a "not enough disk space" alert - which is wrong and you can just ignore it.
Patches
If you have the 4-in-1 boxed set it is unpatched.
Install the Tales of the Sword Coast patch after installing BG1/TotSC.
Take the Tales patch from http://www.sorcerers.../index_misc.php
Install the ToB patch after installing SoA/ToB.
Take the ToB official patch from http://www.sorcerers.../index_misc.php
Don't install any other patches.
If you find the screensize of BG1 restrictive there are mods to run BG1 in the BG2 game engine (EasyTutu) or run the entire trilogy from one install (Baldurs Gate Trilogy).
If the screensize of BG2 is restrictive there is a widescreen mod available.
BG1 can have a tough start compared to many games, requiring repeated reloads or frustration until you find an appropriate tactic to manage or avoid early encounters. If that's the case, stick with it.

Thanks mate. Had some trouble running the game, but just had to swap to my laptops intigrated graphics instead of nVidia.

Um, how does bows work?
I bought a longbow and a dagger at the inn for my Ranger, but when I try to put it in the quick slot and attack a cow he approaches them instead of attacking with the bow.

I'm an idiot. Why I no buy arrows?
Dragon Age has left me spoiled from the good 'ole Diablo II days.......

LOL just had a mental picture in my head of your Ranger whacking away with his bow at some indigent cow... priceless!

Yeah. Well, as the intro tells you, the game starts in a monastery-fortress full of monks, so whacking one will tend to annoy the rest of them.
The default left-click for non-hostile NPCs (and cows) is talk, so that is why you approach the cow - your ranger wants to talk to her.
The defailt left-click for hostile NPCs is attack, as you can probably see by hovering over one of the hostile monks.
To attack a non-hostile NPC, click on the 'Sword' icon along the bottom row which will then allow you to attack a blue or green-ringed NPC.
I guess you figured that you need ammo to shoot a ranged weapon.
My advice would be to play through the game as it is (just patched) for a while to see how you get on.
Then you can decide whether you want to continue playing the game as it is or whether you want to add some mods.
I reckon that the best mod is one that converts BG1 to use the BG2 GUI and rules without affecting anything else.
Your best bet will be to read some of the mods on the "Gibberlings3" website.
As Gate70 already said, BG1 is notoriously tough at the beginning. Talk to everyone and be ready to face (and flee from) enemies that are way too powerful for you at the start.
Save often. You will be doing lots of reloading.

Thanks mate. By first observation I can definitely see the relation to Dragon Age: Origins.
