Jensen Ackles, Paul Mercier or Brian Bloom for the male PC. Brian bloom voiced Varric in DA2 but I prefered his voice for Alex Shepard in SH:Homecoming.

But, the people you suggested are actually not really 'famous' per say. I love Claudia Black and Simon Templeman, they were great in the games they were in. I am totally for more of them.

Roy was the one that voiced Ben, the biker protagonist in Full Throttle, imo the most amazing voice in a video game ever.

Jenifer Hale was quite special on ME. And I hear her run as Shepard has ended 

Look at her saying Thane's eulogy on the new Citadel DLC. She brings some warmth and emotion to her lines that are awesome.
