My biggest fear is forgetting the ending in a few years, then replaying the entire trilogy and experiencing it all over again.

For good or bad; if it's one thing I'll never forget it's that ending Image IPB

still, you can't install it without Origin, your DLCs are not on Disc, and it won't let you play DLCs anyways if it can't make the connection to the servers to Authenticate..

I made a backup of all my ME3 content, so I have the DLC's on Disk. And you can play ME3 with the DLC's offline. You can test this by yourself. Physically remove the networkable from your PC and Play the Game.

And you don't need to authenticate using a serial key/ Origin when you install?

Of course I need them, and right now that's not a Problem. But if the EA servers go down on some point in the future, it's pretty easy to change that.

My ISP went on strike for a few days and I couldn't play ME 3 with my DLC's.  I have a digital copy, and w/out the internet it won't authenticate the DLC's.

As long as you have a working network adapter in your system, ME3 will "think" that there is a Internet connection, and will try to authenticate the DLC's.

You either need to physically remove your network cable, or disable your network adapter in Windows. Then you can play the game, with the DLC's, with no internet connection.

Edit: You also can set Origin to offline of course.  That's, also of course, the simplest solution... (But why make it simple, when you can do it complicated?)
