So, since a quick search didn't turn up anything, is it possible to swap the models of NPCs?
In my own "Canon" playthrough, I always like to romance Ashley, but I'm always put off by the fact that she looks like a prostitute in ME3, so I would like to replace her model with her ME2 one. Does anybody know whether this is possible, and if so, how?

I know you can swap Legion's model with Shepard's, but that's in the same game. It may be possible to edit her model's hair though, not sure how

Howdy there!
You can also change the mesh of Ashley, click this link and have a read (Thanks to WV for this tutorial):

There is still some bugs, but if you only want to replace a mesh with a different one, then you should be alright.
As usual, there might be problems trying to change over a mesh in ME3 with one in ME2. But give it a try, it might work flawlessly.
