So would you like to see Carver or Bethany again in DA3 and why? (well if they survived in DA2 and choices you made)
For me I will like to see Grey Warden Carver because he actually grows up from his spoiled whiny atttittude he has in the beginning to actual person I no longer hate. Plus Carver was always more interesting than Bethany because his personality was as bland as Bethany.
No and hell no. I want to be a hero, not a babysitter.

New characters are almost always more interesting than cameos. They're easier to explain the presence of, they present NEW IDEAS, there's no worry about their personality making dramatic shifts, no problem with how it connects to epilogues.

So no, I don't really want to see him have any significant involvement in the story. It'd be nice to see if he's still all right, but I'm pretty sure it'd feel like checking in on a sibling, even though he'd have no relation whatsoever to our new protagonist.
Luke could always just say "Carver is doing well. The end." I think that would be fine.

While I like the idea of new party members and getting to know new characters from completely new backgrounds, I really would like to know my old companions are doing okay now they've gone off on their own.

I'd love to see him (or Bethany) as a leading character for any warden related sub-plot. If they didn't end up as wardens, they could just easily replace them with Stroud. No idea what to do with them if they ended up as a templar or a circle mage.
I'd also prefere if their looks were transfered into the new game. (my Carver had long hair, Bethany was Orlesian, etc...)

I wouldn't mind having Bethany and Carver be minor NPCs when you're dealing with a larger plot. Say that you're meeting with a group of mages, one of the mages could be Bethany. Or if you met the templars, one of the templars could be Carver. Grey Warden group? One of them could be your sibling. And if your sibling died then this minor NPC simply won't be standing there, or perhaps they'll have a replacement.
Just a quick cameo like that would be nice. Something that would make returning players feel a bit nostalgic, but without taking too much focus. Our inquisitors don't know these characters after all, their inclusion would be for us as players to see that their lives survived Kirkwall.
It's also the part of DA2 where you have the most control, I think. Thus it'd be nice to see those decisions come with some consequence, even if that consequence wouldn't be bigger than a cameo.
I would really enjoy something like this, just seeing what happens to them after the events in Kirkwall. A little like running into my my favorite "Hold the line"-salarian in ME3. Had a few Shepard's that got to talk to him again and it was really great. Just one of these touches that brings your games together.
