My friends think 'Saren' is pronounced as 'sah-rern' when I'm certain that it is 'seh-rern'. Can anyone confirm this so I can prove them wrong and laugh at them?

And unless you are playing a non-English translation of the game, you both appear to be adding an extra "r" at the end ("rern"), which is incorrect in the native English version of the game.
And you are closest, with the pronunciation either "Sehr-enn" or "Seh-renn", depending on where you want to put the emphasis.
Seriously, just watch a video or two on YouTube.

Where are you from by the way? If your not English, how is Saren pronounced when you come from? I'm from UK but we have so many different accents that most will pronounce it differently even in English, let alone a none English translation. For me, I tend to pronounce it more like I was saying 'Zerun' but with ze instead of sa. So 'Zer-run, due to my Mancunian accent.

Personally I pronounce it Sah-ren. I think the English games are bordering on the two so it may be just down to your own interpretation of it.

I just pronounce it as "Sah-ren", I didn't think it was prounounced any other way (unless I'm just not paying enough attention to the dialouge enough).
