I always throught of it as rather malleable, despite the metallic quality, rather than as a carapace.
So who knows, maybe the "exoskeleton" could incorporate itself with whatever turians have for sweat glands.
All this speculation would be a lot easier if we knew what a turian woman looked like, or atleast if that concept art is... eh, anatomically accurate 
I think that concept turian was wearing undies...not sure we can take it as definitive proof yet.

Also...I think the "metallic" descriptor might be in reference to the "shiny" look of their skin plates/pads/whatever we want to call them. Someone mentioned how glossy the Turian councilman looked at the game's end...so maybe the thick skin plates has the look of metal. I think it's fairly safe to say, after studying them a bit, that their faces/plates aren't like solid sheets of metal. (1)It can't stop/deflect bullets, blades, or blows, just radiation, (2)it's pliable/flexible enough that they can make facial expressions, and finally (3)it gets wrinkled with age. So don't know that it's an "exoskeleton" in the true sense of the word so much as they've evolved something like an outer layer of protection against the radiation (which is thickened skin). So yeah, like you said, not a carapace.
It's possible turians can't sweat through these thickened layers of skin, but the skin of their necks is more fleshlike and, if they can sweat, I imagine it would be through there (and also possibly the skin around their eyes).
As to their reproductive anatomy, who knows. They're entirely alien, and for all their avian-like traits they could simply be their own "type" of creature. I won't get graphic in this thread, though, as to the possibilities of turian *cough* physiology in that regard. :innocent:
