Maybe because Bioware was kind enough to give us a detailed male default of an actual person but not for female Shepard?  Just a thought.  If I played as a male Shepard I'd just use Sheploo.  The female default is just a preset made in the character creator.  Almost all custom femsheps look better. 
Either way, if you look at the threads and the face website there are plenty of custom males.

I like your Shepard. Facecode plz?

My third Fem Shepard. This is the one I use in my YouTube playthroughs, as I think it suits Hale's voice the best.

I've played the game as Male Shepards as well but for some reason, I can't bear changing it from the default. Some of the other images here though are making me reconsider.
