Also, from what I've read there's no way to take screenshots from within the game without the use of an external program, is that right?
Third, I'm supposed to get licenses for the requisitions officer, right? How do I give them to him? I can't find a dialogue option nor a way to give them to him. And hopefully a related inventory question, I can't find a way to just view my inventory. If I go to my inventory screen I can only see upgrades or equippable items. Part of my confusion with the licenses is that I'm not entirely sure I bought them.

As for the licenses, the NRO (Normandy Requisitions Officer) get's them automatically as soon as you buy them. If you're haveing trouble remembering which licenses you have bought, if you check here: masseffect.wikia.com/wiki/Armory_license, you can make yourself a little checklist as an aide memoire. Personally, I don't bother with them until I'm level 36, and can get the Kassa Licence for the best armor. You can usually find perfectly good kit when looting from crates!

I think I've got the Ekloss license. Every time I see a merchant I'm making sure to buy licenses. I'm playing a Vanguard, so is there such a thing as "best" armor?The Grey Ranger wrote...
For licenses, if you're planning to continue through ME3 also grab the Elkoss combine one. Otherwise, Serrice council, Kassa Fabrication and maybe Geth Armory (if you want the berserker, battlemaster, rage armor for Wrex).

Another question, is there any kind of order I should know? I still haven't been to Noveria or Feros and have several Assignments yet to complete. Will I be locked out of completing assignments at a certain point?

You can play the main quest planets in any order. Completing Noveria/Feros will unlock additional assignments. Also, make sure you do the Luna assignment as soon as you get it (@ level 20).Another question, is there any kind of order I should know? You can earn XP and credits and weapons/armor/mods from unlocking stuff.
You can always revisit uncharted worlds. You cannot revisit primary missions (Noveria, Feros, Virmire, Therum, Eden Prime, although the hub portion of Feros and Noveria can be revisited). One or two secondary missions will disappear after you complete them; for example, youblow up a ship you visit so you cannot re-board it. So you can always revisit planets once you or a squadmate gets your electronics/decryption skills high enough.

I just hit my mute button whenever I open a primary codex.This is my first ME playthrough and maybe I'm missing it, but is there a way to turn off having the codex entries read to you? I don't see anything in settings but it's really annoying.

The mechanics and gameplay of ME1 are very different from ME2/ME3, you have to keep this in mind. Eletronics is a must if your class have it, because you will gain the overload ability, wich damage or remove shields from your opponents and depending the points you put in the talent you are able to open average or hard objects.
But more important of all, it also raises your own shields, so spending some points is very advisable (actually A LOT of points, is one of the firsts skills I spend some points when becomes available LOL ).
If you can't access a object with the skill it means you didn't achieved the required level to do so, you need to reach level 5 in the talent for being able to access average locks and level 9 for hard locks.
If one of your squadmates have the talent and have reached those levels you should be able to open the probes.
For example, most of the time my Vanguards have Eletronics as bonus talent even if he can't equip an omni tool, so you don't need to rely to much in barriers, wich brings your accuracy to rock bottom when activated.
