Is it weird that Auld Wulf makes a Controller want to pick Destroy now after reading this thread?

You're not familiar with the Leviathan DLC? There's no contradiction. The Leviathan witnessed it themselves.
According to YOUR logic, they didn't witness anything, because the Catalyst was created to stop the extinction before it happened. Hence, contradiction.
But then I remember who I'm holding this conversation with.

Hmm. I think you need to listen to what the Leviathan says yourself:

So synthetics were observed killing their creators.
Not wiping out all organic life.

So the extinction of all organic life is just an unproven hypothesis and in effect the Catalyst is perpetuating the actual problem.
To me, the Leviathans were just selfish and arrogant and wanted their thralls to stop dying on them. They didn't care about life in general.

You can't because it is already disproven. Synthetics, if hostile at all, are always destroyed before they actually surpass organics. Because Synthetics follow pure logic while organics find creative solutions. That's the reason why Joker is a better helmsman than Edi. That's the reason why Garrus can calibrate guns better than Legion.
Quarians got Xen's anti-Geth weapon. The galaxy built the crucible. By defeating the reapers, we have proven that life always finds a way.

Leviathan thrall races? Why do people keep forgetting that?

Or how does someone prove the hypothesis?

But the beauty of being the Catalyst is not needing to prove anything to anyone - you'd just start a killing spree of unthinkable proportions based on your theory. And some day, after an eternity of genocides, you'd give some lesser creature the choice between 1) taking over your job or 2) changing/improving every single being in the galaxy in order to make them fit your ideal of a better future. There'd also be an option 3), but that'd be the option for those of lesser intellect and should be ignored.
