Not all races are xenophobic, take the Quarians for example(yeah, again), they're so open-minded about the other races, that interspecies relationships are widely accepted. The only time when they seem prejudiced, is when some of them are surprised what a good speaker a human can be. Zaal'Koris appears distrustful towards Shep, but that's only considering the circumstances, plus he's immediately criticized by the other Admirals. Likewise, the Elcor, Drell and Hanar show no signs of xenophobia.
It's true, that the other races are extremely xenophobic towards humans and each other. Still, her xenophobia always bothered me, especially paired with her meathead attitude.

ME3 made me regret that decision, when it became known that the only way to get "Reave" is to have Kaiden on the squad. Which is ridiculous... but anyway, yeah. Screw you, Kaidan.

Mostly they both get sent to work for Hackett. It was amusing to hear Ash whining when paragon Shep said no.
There should have been an option to leave both behind. Just for choices not because I wanted to. I would have liked to have them both back, without the melodrama.

Both to me aren't the best characters in the series judging on where they came from and how they act, but they both represent a side of humanity we still face today that is both questionable and understanding.
Ash is xenophobic, is as many humans, but she means it in good intentions. Kinda like how we impersonate that aliens can't act human, and that any alien species cannot comprehend like "we" do. Basically she wants humans to stay more human to show our strengths than "assimilating" into galactic society as a whole. On her religious side, it doesn't play much of a role but she believes in a Christian God (Correct me if I'm wrong), and through that that may represent our humanity to cling onto beliefs like other species have. She's a tough cookie but vulnerable, both are really.
But I don't know about Kaidan. I honestly can't pinpoint him. I seem him as a broken person, but broken in a sense of humanity. He, to me, goes out to help others regardless of self and exceptional need following Samara but without the black and white aura. Kaidan is a buffer between old humanity and new, he can bring emotions typically associated with current events in the game from showing loss of love and self-sacrifice to promptly showing his passion against the enemy. Like I said he is a broken one in the buffer zone, playing a human of mass potential (hehe) and potential of showing humanity in it's polarizable-complex stance on everything but without a proper force to drive him, lost without cause.
I'm not sure if I make any sense, but both characters act in a fashion of favoring their race to an extent as any other species would do but both have their flaws about keeping humanity a little bit more human.

This, except I've romanced Ash with my soldier Shepard. Kaidan offers more and feels more natural with his Cerberus objections. Plus in ME3 he actually reintegrates into the Normandy and shows some more personality (post Sanctuary and Citadel springs to mind)..in game reason -- Kaidan is a superior officer and a biotic so he is more valuable in defeating Saren. Ash is cool and all but she is just a regular dime a dozen soldier.
meta game reason -- Kaidan has much better dialogue in Mass Effect 3.

on my maleshep playthrough. I managed to screw up somewhere in the dialogue options which forfeit any chance romancing her, but still don't know how I did that.
I kind of like Ashley in the first Mass Effect, but in 3 she became more cynical with a huge air of negativity.
I sacrificed Ash in my third ME1 playthrough, and romanced Kaiden (femshep again). The ME3 playthrough is still in progress, but even now does Kaiden seem more like a 'nice guy', not as negative as Ash.
I'm tempting to romance Ash in my next maleshep playthrough, since having watched some vids of ME3 in that perspective, she actually seems like she's worth it
But first I'll have to finish my Kaiden-playthrough to be able to give a definitive answer to the Kaidan vs Ashley dilemma.

And eventually I started taking turns. It was harder to leave Kaidan behind because I like him a bit more than Ash, But either way leaving someone behind was a hard thing to do.
