I'm doing a playthrough of ME1 which I will eventually take into ME2 and I want to keep Shepard single in this one. How do I avoid starting up romances with Liara or Ashley?

I've no problem not romancing Liara because she actually asks if you're attracted to her. I just want to avoid starting the romance path with Ashley without being a jackass towards her. Just finished Eden Prime and instead of telling her she couldn't have known what would happen I just asked what happened. As I always do I thanked her for helping get me back to the Normandy. Does thanking her rather than just asking if you were hurt automatically start the romance path up, even if you didn't reassure her before?

Your best bet is to just not talk to Ashley at all, or turn her down she comes to see you after the Citadel Lockdown, the romance paths were pretty easy to do for any of them.

You can also make the decision on Virmire. That will take care of any romance accidents.
If she smiles at you, that's a clue you picked the wrong answer. I usually just stay away from any personal questions. Sort of aggravating because I'd like to talk to all of them about their life, family, past, without a romance accident and it's hard for me to do.

It was pretty easy to accidentally initiate a romance. Best thing to do is, when talking with them, watch the dialogue options and go neutral/renegade at the appropriate times. I actually got the "mixed signals" dialogue from Kaidan, and all I'd tried to be was polite.
Thankfully I was able to clear it up and say "we're just friends," and then I had to do the same with Liara. I guess I can understand (not really)...it's tough when you're in space for such a long time...every "hello" and "how are you" become propositions.

Well I've just replayed that first critical conversation with Ashley and went for the neutral mission oriented responses and didn't get smiled at. Hopefully that means I'm home free on the no-romance side.

You'll know when you're at the scene after Lockdown, before anderson calls you, and Neither Ash or Liara comes to talk to you.
It's tricky because at times Ash acts like she assumes you're attracted to her or already have a romance, and even the renegade choice is "positive" for a romance.

Anyways, to OP, there are several opportunities to turn down Ash. Usually if you see an option like "That's inappropriate" or "You're out of line" you sort of let her know that you're not willing to fraternize.

It might actually be worth attempting to romance both SuZe and Miranda just to get the cat fight. Then Shep can extricate himself and finish up with Thane . . If only, I'd lmao for a long time . . .

Well as an Adept if SuZe threw that chair at Miranda I'd throw it right back at her...

It is difficult to avoid Ashley romance. I'm going for a single Shepard for ME2, and it seems like every nice conversation option builds a romance. I like talking with her, but it seems like I'll just have to keep doing the Virmire thing.

With my male Shep I picked Liara but with my fem Shep I turned down Liara and killed Kaiden.

Liara just asks you directly if there's something special between the two of you and you can say no which kindly ends that romance path. Now Ashley will start a romance without ever telling you about it....the best bet is near the game's end in the continuation of the scene where the Normandy gets locked down.....when she approaches you by the lockers outside the med bay tell her to go away and there will not be any romance.

When you reach the entire "Shepard, you're feeling all right?" scene right after the Normandy lockdown, you can tell her off by using the renegade options. She'll leave and break the romance off with you because you're a crybaby.

That's what I'm doing... well except the very first conversation with all of them. Not like anything changes when you talk to them (Well... you could 'change' Ashley a bit when you romance her, but seeing that is out of the picture...).
Then I'm going to reload, and romance Liara and do the last major missions again. Et voila.

I don't think I was a jackass. She said (in reference to me and Liara) "I thought we were getting along pretty well," at which time I replied "Perhaps better than a commanding officer and one of his crew should." You can then apologize for giving her the wrong impression.

I didn't so much get the crybaby vibe as I got the pissed off impression of Shepard and Ashley just gets upset because you mention something about her grandfather. It's the least jackass option to break up with her.....at least you have a reason for being pissed off.
