The "Ferelden at War" -track during the Ostagar battle scene is epic. I hope something like that will return.
I hope the "DUNNN, DUN DUN DUN" sound is back in some form.

Would've been cool if Bioware had contacted Malukah to partake in some vocals for DA3.

I adored the haunting, ethereal music of DA:O and thought it fit the game like a glove. And OP, you're right, the "dunn, dun dun dun" is quintessential Dragon Age!
Planescape: Torment had some good music:
(Sorry, I can't figure out how to make a slick, text-based link...) The Elder Scrolls: Redguard also had some memorable music, but I can't find any links.

I'd rather they stuck with Aubrey Ashburne for the main chunk of the soundtrack, but that could be cool for credits. Maybe a bard's tavern song or something too.

Exactly. Have her voice a tavern singer, give her a few songs to sing, and voila.

It's kind of the most representative part of the soundtrack, at least for the players. I really want the Grey Warden theme somewhere, you know that part that comes after the "DUUUUN, DUN DUN DUN".

This reminds me of when you tap out a song on some likely surface and look expectantly at someone and ask them if they know that song and they just look at you like you're retarded because tap tap tap tap TAP is not a song.

I'm sure the most recognizable part of DA's themes will be back, thats how people recognize its DA after all.
