I'm using the latest EclipseRay download (1.2, I think).

I have a problem where I add some lights to a scene and hit render lightmaps. The render finishes successfully, but the lighting does not visibly update. View lightmaps is on, view models with full brightness is off. At some point in the future, maybe after changing something else and saving, or maybe while doing the posts, the lightmap will suddenly update. This is very frustrating because I can't see the effects of my changes until some random point in time.

Any idea on how to fix this?

You have to toggle viewing of lightmaps to see the latest version. Just turn it off, then back on again, after a render.

Actually, that didn't completely resolve my problems. I'm still running into old shadows sticking around forever. For example, this area was previously a depression but is now completely level. Even after changing every single light to something new/deleting, rendering the light maps and toggling view light map on/off I see this:

try to delete the lightmap (yourlevelname.erf) before hitting the render button another time. after that your problem should be solved. when placing baked lights you have to render it again. static and dynamic lights will be displayed immediately wihtin the editor.

That did not change anything unfortunately.

EDIT: I just went on, editing some of the terrain and when I did all my posts it went away. I'd like a quicker way, though.

Sometimes part of the lightmap will change, but a lot of the time I'm still stuck with these weird dark shadow spots.

Think I figured out the solution to problems like this, in interior and exterior levels. If you do a Local Post of your level I think it has problems overwriting the lightmap render file after the fact. So the trick is to delete any locally posted info before doing another lightmap render.

1) Close the toolset (otherwise the following steps will nag about the file being in use)

2) Go to My Documents/Bioware/Dragon Age/Addins/YOUR_ADDIN/packages/core/override/toolsetexport

3) Delete the folder related to your level

4) Open the toolset

5) Load your level

6) Render lightmaps

Then you'll have to do another Local Post once its finished (and you're happy with the result)
