What happens? All the guides talk about Dawn Star and Silk Fox but never Silk Fox and Sky. Dose the game favor one? Do you still get the pick one option?

I haven't tried it myself, but as far as I know the game is set up to favor different-gender options. I've read that you can't get same-gender options until you've rejected the other(s).

In my experience, if you flirt with both of them, Sky's romance will progress over Silk Fox. You can't hsve a three way like you can wth a male Spirit Monk, DS and SF
