What exactly is the challenge rating? Is it automatically generated from the levels, feats, and abilities you give a bad guy? Or can you adjust the challenge rating yourself and somehow make a level 1 monster fight like a higher level?
Also, how is the xp that's awarded to the player determined? Is there a place where you can adjust that yourself?

Challenge rating is basically how tough you think the creature is to fight. It's not automatically generated, and setting a CR for a custom monster is up to you based on how tough you think it is compared to other monsters. You can adjust it yourself but it does not change anything about the monster. It's only used for xp calculation.
The module property XP scale (or something similar) lets you adjust the rate of getting xp for killing stuff module wide.

Assigning CR in NWN is more of an art than a science. I tend to think of CR as being roughly equal to a single pc of that level, maybe a little lower.
You can use sites like monsterfinder.dndrunde.de/ to see the CR of basically every monster in DnD, with links to their official stats.

I've always used the page up and down buttons and moved them around..

I dont understand CR either and just get a whole bunch of orcs and set them at different numbers in a test area and send in an exported PC of the level they'd be at that particular time and kill them then pick the number I think gives the right xp.and stick it on the creatures they're going to meet.

actually cr5 means that the monster is a moderate challenge to a party of 4 pcs with the level of 5. considering that the whole cr system is kinda borked even in its pnp origins, i wouldn't get too serious about it.
