It won't matter all that much with regards to your interactions with him in 2 and 3.
Disagree. A romanced Kaidan has much more to say in ME3 than a non-romanced one. It won't change the game much, but the experience for sure.

So it isn't just a few lines that are different in the early missions and the first time you talk to him after the first mission?Jukaga wrote...

I haven't finished it yet, but after re-kindling the relationship with him on the Citadel, there was a completely new conversation with him on the Normandy that never happened in my other non-kaidanmancer plays. I've heard tell there are more down the road.
On a tangent, it's a pity Ash gets shafted in ME3, there was that cut scene circulating around here before where she asks Shep about the afterlife, from the script it would have been a really good scene.

There should have been a confrontation where Kaidan asks you to choose, it's pretty clear the decisions you have to take to have either Liara or Kaidan. Are you sure you have reached this point? Kaidan will tell you he's confused by your behavior before this but this doesn't kill the relationship, you need to have the conversation with Liara and Kaidan where he forces you to choose.
I did not have this option. I guess I did something wrong. I already beat the game >.> I plan on romancing Kaiden in both ME2 and ME3, I just wanted to see if not romancing him in ME1 would make a significant difference in my conversation and relationship with him in the next 2 games.

Either a bug or you said the wrong thing to Kaiden and he lost interest (or thought you weren't interested)Kitanna15 wrote...

(I tried to have my second Fem Shep romance him but her whole "I don't give a **** over what the council thinks of me and you shouldn't either" attitude drove him away so I ended up with Liara)

What conversation was this?
