I'll try to keep it short.
I've only recently discovered this gem of a game and I'm having great fun playing but I feel really overwhelmed by crafting and enchanting. I feel bit frustrated that I need to hold on to all of these gems, books and materials instead of just selling them. Inventory management (space/encumbrance) is becoming tedious as I'm already a hoarder in RPGs. Browsing some crafting guides available on the internet, I found the whole crafting process very complicated and time consuming but what's worse, I've read that it's essentially needed to be able to finish the game.
My question is simple - can I ignore crafting and enchanting altogether and instead only rely on the loot I find?

Yes. You can potentially craft more powerful stuff, but it's not necessary at all. I didn't bother with it in the OC personally (except maybe a mithral shield or something), for the reasons you mentioned.

My experience matches Ark's, that it isn't necessary for the original campaign. Or at least it wasn't at Core Rules. You find plenty of magical gear that's more than enough for the tasks, even when most of them use up an enchanting slot with something you don't need like coloured light.
That said, I like the idea of crafting, and I'd do it more often if the game had an interface for it rather than having to hunt through recipe books to find what components I need. The Storm of Zehir campaign improved the interface (not enough), but took away most of the components, too, which I would rather were left in.
What would have helped me most, I think, is a simple list of which gems were safe to sell without missing out on anything.

As for the gems to keep - the big 13: Beljuril, Blue Diamond, Canary Diamond, Diamond, Emerald, Fire Opal, Jacinth, King's Tear, Obsidian, Rogue Stone, Ruby, Sapphire, Star Sapphire.
And yes, that's from memory. Knowing that their are 13 is half the battle. Mnemonics - it's not just for breakfast anymore.

I'm a neat freak when it comes to inventories, so I like to invest in magic bags whenever possible. Since magical crafting components tend to be light, a cheap magic bag is ideal for keeping your gems, books, alchemical components, etc.
I tend to put non-magical crafting components (ingots, leather hides, wood, molds) in a more expensive bag, since stacks of ingots can get heavy for some characters.

Dunno where you read that but it's complete nonsense. The original campaign is made for people new to the game and is not very difficult at all. Personally I didn't stop crafting stuff because it was tedious or anything like that, I did it because the amount of extra damage it lets you slap onto your weapons etc is insanely overpowered.

I never use crafting myself. However if you have SoZ and you like its crafting style then you can use my OC Makeover to add that functionality into the OC. Oddly enough the majority of patches I have released for the Makeover involve either fixing or enhancing crafting. The people who like to do it can be very vocal.

I prefered the crafting in the OC. Having to find rare components, and having a party member who has both the required feat AND can cast the required spell, made up for how over-powered crafted items can be. Crafting powerful items *should* be difficult.
I'd have also liked to have seen spell hollowing as a consequence of too much item enchanting in too short a time.
