I think killing her own mother, pursuing Saren, and fighting the Geth among others drastically changed her personality.  Although I too was disappointed with her change in ME2.

So did I. I never really liked her overtly naïve attitude in ME1. Yes, she is more ruthless, but nerd Liara is still there (as evidenced in ME3 by the whole dinosaur thing on Eden Prime). So now we have the best of both worlds nerd Liara and ruthless Liara all in one.

Kaidan

Garrus

Kaidam/Garrus equally through different playthroughs.

Garrus is a pretty cool romance and before the citadel DLC i thought he had a better romance than Kaidan. But kaidan steps ahead with the Citadel date where he makes shepard dinner because it just seems so genuine and real.

However kaidan's jump in interest in alcohol in me3 is a big turn off for me. It's fine if he drinks but he talks about it or it is a reference in almost every love interest conversation you have with him. I really have no interest in someone who seems to be on the edge of starting the early part of alcoholism. It just makes me think the future with him will go down hill. Garrus not wanting to go for drinks and to do something fun is what made him prefer his me3 romance more at first.

I have enough games that I play as a male that when a game(s) give me the choice to play as a female or male I always choose female.

The only games I have played as female are Fallout 3, Fallout New Vegas, DAO, DA2 and the ME trilogy and the Tomb Raider games

I have the very same reason for always playing female protagonists when I can. The market is saturated with the same male protagonist. I like playing as something different. Heck I latch onto games where I play as a man that is simply not a mid 30s white guy with brown hair.

The last was my FailShep, based on Jayne Cobb. Unexpectedly tragic. Everyone he took to bunk ended up dying through various circumstances.

Strangely enough, despite maining female characters in a lot of games, I haven't touched female Shepard. Female Shepard was very unpopular if the poll reported by Bioware were to be trusted.

Canon MShep- Ash through all three games.
Canon FShep-Kaidan all three games.

The rest varied. If I was RPing Engineer Shepard, I usually went with Tali. Usually chose LI according to what class I was. Infiltrator went with Miranda, Adept went with Liara (not in ME1, though, can't stand her in that), Sniper!Soldier went with Garrus, Vanguard with Jack, etc. Only two I didn't really touch were Thane and Jacob. First because he's dying and I don't want to make things harder on him, second because I know he's about to meet the love of his life, and I dont' want to make things awkward for my bro. My playa FShep will usually tap dat while she's on a break from Kaidan, though.

Same here. Sort of. I actually have 5 female Shepards, and none of them have the same LI's not really. Sara romanced only Garrus, Nadia romanced only Thane, Rhianna romanced only Kaidan, Lilith romanced Kaidan and then left him for Garrus, and Silvia romanced Liara.

But like you I have only one that really matters and that's Garrus. Thane is a close second though.

ME1 - All playthroughs with Ashley, did not care for Liara
ME2 - 8 out of 10 plays with Tali, one with Jack, one with Miranda.
ME3 - 4 out of 7 plays with Tali, 2 with Jack, 1 with Miranda.  Again no Tali, still didn't care for her nor did I care for how Ash's character was done in ME3.
