Most of my ManSheps romanced Ashley in ME1, but half of them still chose to save Kaidan.

Other than that, I've done one playthrough for each LI except Samara.

I'm currently in the middle of ME2 with a Shepard who is wooing Jack, so I guess the answer to the OP is Jack.

my only regret is none of my sheps could romance Jack. They were all carrying the torch

Miranda is my Shepard's one and only. For me, there is only one romance for a male Shepard. I have no interest in any other LI. I do romance Ashley in ME1, but it's for the dramatic ability potential I can headcanon/Fanfic with the character. She adds spice to the story that I can use.

I don't play as FemShep, but if/when I do, I'll either go with Kaidan or Thane (he's the only romance for FemShep that actually feels like a real romance, despite the tradgedy that it end in). I'd go with Miranda again if I could.

Not that it matters, but I'm also completely uninterested in aliens (minus Thane). My Shepard has no sexual or physical attraction to aliens at all.

Romanced Liara in ME1 in my fight run but deleted that import mid way through ME2 once I saw what happened to Liara. Also romanced Miranda once by mistake but never imported it to ME3.

ME1 - I liked all the romance options, but I liked Ashley the best, with Liara a close second.
ME2 - I liked most of the romance options. I think I did chose Miranda the most often, with Tali being a close second. After Lair of the Shadow Broker, Liara probably became third. I was indifferent towards Thane, but I can see why others like it. I hated Jacob. I would agree with those who were disappointed with the character arc chosen for Liara.
ME3 - Liara was by far the most common, mostly because she seemed like the official romance. Hers seemed be the most developed and have the most content. Then there were the secondary paramours, Kaidan, Ashley, Garrus and Tali, which didn't seem quite as well done or polished. Then there were the new romances, Traynor, Cortez and Allers, which seemed tacked on and rushed. Then there are the forgotten romances, Miranda, Chambers, Jack and Thane. Finally, there was the aborted romance, Jacob. The vast majority of my characters ended up with Liara, simply because it felt like what the game wanted, although Tali was a distant second.

In the first two games, the romances felt fairly equal. In the last game, it definitely felt like there was an official romance which received by far the most attention. Sadly, Ashley, who was my favorite romantic interest in the first game was pretty unlikable in the third.

I wanted to romance Kaidan ever since my Shepard started looking at his butt all the time when he was fixing that machine in ME:1. I mean, seriously, he gives him this flirtatious look and his body language is hilarious (It's so obvious that BW cut out the gaymance). Ever since I found the mod, I said adios to Liara, and did the romance I obviously wanted.
