I have yet to finish a second playthrough of ME3, so my only complete Shepard (aka my "canon" Shepard) went:
ME1 - Kaidan
ME2 - Garrus
ME3 - Garrus

Post-Citadel DLC I find the dead-end of Thane's romance somewhat tolerable with the additional content, so my 2nd Shepard will stay faithful to him (ME1 - Liara, ME2 - Thane). 
And my ManShep has been single and is oh-so-ready for Cortez!

Other than that, any future FemSheps will go to Garrus.  Why fck with perfection?

One story I always liked about the Romance throughout the trilogy is this:

ME - Ashley
ME2 - Miranda
ME3 - Liara

It goes like this...

I like to think about Shepard and Liara's relationship as one of those were you have two people who really liked each other, had everything to stay together, develop a romantic relationship, but in the end, there's always something that interferes and makes it difficult or impossible. There's always circumstances that dictate their failure to do so.

In ME1, when Shepard meets Liara, he has already been in the earlier stages of the developing of a relationship with Ashley, and even though he starts liking Liara a lot too, considering that he was already developing a relationship with Ashley, in the end, he chose Ashley. If Liara had appeared a little time before, things could have been a whole lot different. Circumstances dictated they would not be together.

Then in ME2, Shepard and Ashley ended their relationship, and now one would assume it would be the perfect opportunity for Shepard and Liara to finally develop something. Thing is, Shepard was "dead" for two years, and when he got back, he was on an incredibly important mission to stop and destroy the Collectors and Liara had her own thing going on, with her new business and her obsession with getting revenge on the Shadow Broker, and therefore could not join Shepard. Basically, again, circumstances dictated their estrangement from one another, and once again, a possible opportunity for them failed again.

Shepard dated Miranda throughout the ME2 events but then, when he was confined for six months, between ME2 and ME3 events, he had the time to reflect on everything about his life, and it was during this time he realized he wanted Liara, he realized how much he loved and cared about her. Then, he breaks off with Miranda and finally starts a relationship with Liara.

Basically, this little story is about them, who always had special feelings for each other and had everything to work just fine between both, but the circumstances were never on their favor, it always impeded them from finally developing something special. But then, finally, in the last game, the realization comes and they finally manage to surpass everything and start.

It's just one scenario I imagined would be cool and add more to the story.

P.S. It's especially funny because I never wanted to romance Liara, I always viewed their relationship as extremely close friends.
