So, I have tried every set of buttons my PS3 has in order to scan/dig with the Hammerhead to no avail. Am I missing something? I don't recall this issue when I played it on the Xbox 360...

Well it is Y on the Xbox, which is the uppermost face button, so I assume it would be the same on PS3, which is... Triangle? You have to hold the button to scan/dig over something that you can pick up, so maybe you are not over something yet?
Just guessing here. I thought that this would have been covered by the tutorial dialogues that pop up on your first Firewalker mission, assuming you played those Hammerhead missions first (as opposed to the Hammerhead in the Overlord DLC).

Perhaps that was my problem, I played Overlord first. I didn't get a tutorial and I swear I have pressed every button on that controller and held it down. Nothing happens. Is there a way to get out of this mission? I just entered Vulcan Station.

At this point I assume you have a bug that is preventing you from picking stuff up with the Hammerhead.
Since you are just playing Overlord, there is no real need to pick anything up with the Hammerhead, unless you are trying to get the achievement for picking up all Cerberus Data Packets. Once you have that achievement, you never need to get it again (it provides no bonuses for ME2 and has no effect on ME3). The only other stuff to pick up are resources, but you can get a lot more from planet scanning anyway.

I managed to get it to work! I had to reload a couple times, but finally the scan button worked!
