Other than GJ, what characters are good for levelling up melee points? I've only got 480k melee points in ~128hours of MP, so I'm a way off getting the Combat Mastery challenge.
Best characters to rank up melee points?

Shadow Strike doesn't count for the melee challenge, only her heavy melee does.

Warlord: on gold with the right setup you can just hammer people "raw" and kill them in one shot when the rage is going. Talking about any pint size person with 2 legs besides a phantom is done. One thing to be mindful of though is that using biotic or electric hammer. Will not do much in this department. The power takes alot of the credit from the melee.
Brawler: this dude with a good build you can just close the distance with biotic charge and punch people out.
Slayer: with a good build he takes heads all day and since he teleports when using a heavy melee it's a cake walk.
Shadow: her shadow strike is considered melee and she isn't bad at taking heads with heavy melee she can be a bit risky though and it's not as easy to keep up a constant flow of melee kills with her due to being squishy.
There are other classes but these have the best results as far as strong focused melee builds go. Others would be more of a situational melee type and would take more skill to force the moment.

Any Krogan/Batarian, or Volus with Bat gauntlet.

I don't believe shadow strike counts towards melee points on the challenge even though it counts in game as melee kills. They may have changed it but it didn't at one time.

I love Vorcha Soldier decapitator mode for Bronze and Silver. But you can't beat that Krolord for survivability. He gets the regen, massive shields, tech armor redux and a cyclo achieves A LOT. The Vorcha Soldier is hella fun to play melee style though.
Just to be an idiot, I sometimes put the Batarian Gauntlet on the Krolord to Falcon Punch. Shame the hammer charges don't work on the glove. Can still use em as part of a light melee combo.

128 hours of MP isn't a lot of experience, therefore I would not recommend anything other than Krogan Warlord, Krogan or Batarian Vanguard. If you gonna go melee you better use a goddamn tank.

You can spec the demolisher for some serious melee, along with any Krogan or Batarian. Shadow melee works good, no need to shadow strike a lot of enemies, just cloak and swing.

Krogans are all good choices, as mentioned.
I've just come back to the shadow. I hate SS and rarely use it (only take the first 3 evos). Instead, I use a wraith + omni-blade, cyclonic, juggernaut shield and strength enhancer 3; her cloaked HM will OHK basic enemies, sometimes 2+ in one swing. You can then OHK other mooks with the HM kill bonus. Effective on gold and very satisfying.

This and the Shadow I would say are the easiest.
With the Shadow just remember to not Shadow Strike Abominations and don' target Ravagers from the front or they will spray that sac-goo all over you.
The Krosent is my favorite. Skip incinerate, you don't need it, and equipe a shotgun with omniblade. In fitness I've tried all melee and: melee, melee, fitness. Had a lot more sucsess with the last one as I found moer use for the extra health/shields as opposed to the decreased number off kills to trigger rage.
I found this enlightening: social.bioware.com/forum/1/topic/343/index/16628194
Also the build which was mentioned by Boog_89: www.youtube.com/watch

No, the Talon doesn't count towards the challenge. It has to say "melee" in the kill feed to count toward the challenge.

all krogans, cabal vorchas, EDI bot and batarians are ok but lose to many kills due to slowness and douches for teamates.
