Just hope we get a game of the year edition cause I definitely want all the dlc on one disc

If they were going to release a GOTY collection, they'd be hard pressed to not do a trilogy collection--they could market one, and not the other, and the latter would probably bring in more sales.
Unfortunately, doing the trilogy has it's own problems, because either it highlights the inconsistency between 1 and 2, which isn't something they're excited to do, or it requires them to port 1 to the new engine and update it heavily, which alone approaches the cost of making a new game. Realistically, there's just no way to make a trilogy collection financially viable.

All three Mass Effect games run on the same game engine, the Unreal Engine 3. Bioware just got better at using it.
The problem is if you bring in the combat mechanics of the latter two games into the first, you not only have to change the combat mechanics but the level layouts, after all there are parts of the first game without chest high walls to hide behind.
Not to mention you'd have to say goodbye to the Geth Hoppers. Imagine trying to take one of them down with the combat in ME2 and ME3! They are a pain to hit at the best of times but without 'unlimited ammo' and biotics than can actually affect shielded enemies? Dear lord there would be a lot of smashed controllers/keyboards.
