Soldier? Really? Well well, I'm still new for all this, but did some research before my first playthrough and found the Infiltrators highly interesting, so I went for them. (ok, I assume I was thinking about picking a soldier at first, just didn't knew they were the most popular around :) )

That was my first class 6 years ago because as a Spectre, it makes a lot of sense to be an Infiltrator.

I played soldier first because he had access to all weapons, and because as others have pointed out that gave me a sense of familiarity having come from playing shooters that gave me various weapons.

After that I switched to Sentinel, because I like being able to do everything.

Adrenaline Rush gives you a +100% weapon damage bonus while activated. Heightened Adrenaline Rush will give you +140% weapon damage bonus while activated.

This information has really got me PO'ed. Here I am playing an Infiltrator because I want to be a super-sniper. But now every time I take a head shot from cloak I am thinking, yeah right, I get a 75% damage bonus, but the soldier would get 140% damage bonus. Plus the soldier can adreneline rush every 3 seconds and then shoot for 5 seconds, while my supposed sniper class can only get the damage bonus once every 6 seconds and then only for one shot.

Time to try out a Sentinel again. I liked that class and I don't feel cheated. (I have OD'ed on being an engineer.)

It doesn't work that way.  I have no idea where the thread is now but someone took the time and tested it.  Sniping is the infiltrator's bread and butter so as long as you have ranked up the proper skills they will out DPS a soldier + AR with a sniper rifle.  Also in ME2 the infiltrator is the only one that can pick up the beastly sniper rifle (or so I remember) and that thing out classes the others by a far margin.  I haven't played a soldier in ME3 so not sure there but with shield gate plus everyone having access to all guns I don't think it matters.

Apologies for the quote pyramid.

It should be noted that in ME2, both the Soldier and Infiltrator can pick up the Widow, a powerful single-shot sniper rifle. It should also be noted that the Soldier and Infiltrator can both one-shot all basic troopers with the Widow but not elite enemies regardless of weapon damage bonuses. The Viper is a very good multi-shot sniper rifle and should not be ignored.

Also, Infiltrator's cloak takes some time to break and you get a damage bonus for a 1-2 seconds if I recall while cloak is still active, plus enemies ignore you while you are cloaked. Soldiers may get more of a weapon damage bonus, but time is also slowed so you actually get fewer shots in while under Adrenaline Rush. That may or may not matter depending on the weapon you are using at the time.

As for ME3, shield-gate is 100% on Insanity, so single-shot sniper rifles are practically useless. With a specific setup, the Infiltrator can one-shot most shielded enemies with the Javelin.

Just a follow-up to the infiltrator vs soldier discussion: I checked on the wiki to see how cloak and adrenaline rush changed in ME3. I guess the designers agreed with me. The infiltrator in ME3 gets a greater damage bonus when breaking from cloak (especially with a sniper rifle) than the soldier gets from using AR. I am guessing that this discussion about infiltrator vs soldier bonuses was hashed out previously and the designers responded by making changes in ME3.

I played it yesterday for the first time as a default female shepard soldier and after playing 20 minutes, I deleted my infiltrator save in ME2. I love the adrenaline power, it reminds me of bullet time from max payne and it really makes the action great. They're also trained to use every weapon so they can handle any situation. You also have a use for your squad members because you have no biotic or tech abilities. I hate it when I have no need for squad mates.

The idea that soldier's are "dumb" or less interesting than other classes is the most overrated and flat out untrue opinion about Mass Effect classes. It's tired, cliche and just wrong. Personally, from a role-play perspective, I don't see Shepard as being anything but a Soldier or a Vanguard (and perhaps an Infiltrator). An Engineer? The elite of the elite of the Alliance is a mechanic? I prefer to experience Engineer's and Adepts, for instance, through my companions. They just don't fit with how I view a character like Shepard, well, being.

Many find having access to all the weapons in the game just as interesting as having a few biotic or tech powers. In fact, I feel you get the most out of the game by being a soldier and playing with a balanced squad. You get to personally use all the best weapons and combat abilities and also get to use your squads tech/biotic abilities. Win/win in my book.

%100 true, I do enjoy playing engineer or sentinel but those don't feel like "hero of the galaxy" classes. Which is why I assume most people go soldier. I just hate seeing my Shepard with the M-8 every other cut scene when I am a Vanguard or Adept. Which makes me want to go Soldier to avoid seeing the M-8 all the time.

I don't like how people view the Soldier class as boring and such. I don't like soldier but I am not going to tell people they are wrong for choosing it. People have a vision of how they think Shepard should be and that's what makes this game great. I played Soldier as my first character way back when I first played largely because in ME1 he/she got heavy armor and all the guns :P But after a while I got to explore other classes and Vanguard became my favourite class. All classes are fun and interesting in their own way and experimenting with them also changes how I chose my squad for certain missions. There's no specific reason why Soldier is the most popular class but people aren't wrong for liking it, just pick what you like and don't be afraid to experiment.
