My first playthrough i had Zevran and he NEVER pickpocketed someone, just looted the chests and
the stupid guards were still coming.
Best option: Pause, and then RUN to the corner alley behind you. Mages in the Corner and the rest in front. Most Archers wont follow and the Melees you will have to fight in 1 or 2 waves.

I am now going to try and pickpocket people in Denerim just so I can have a few more fights...

I agree, In Oblivion ( Oh dear....I went and mentioned it !! ) You get an option to either resist arrest and fight, pay a fine or do a stretch in jail ( resulting in you loosing 1 random ability point ). IMO this works quite well.

I had, i think at least 3 encounters with guards... though i believe one was actually in the Back Alley, or something like that, rather than a random ambush. i assumed they were tied into the fact that my PC was completing Slim Coudry's quests...

Even if you don't agree with that, there are other options that could be included... bribery (of the guards or the victim), persuasion, intimidation, etc. etc. Use your imagination. Having brute force as the only path in this situation is contrary to the whole spirit of the game IMO. I think some corners were cut in this respect.
Also, you must have very little knowledge of the real world if you think fines for criminal activity are something out of the ordinary, so enjoy a little chuckle at your own expense.

Try failing a pickpocket in the Dalish camp. You'll eventually get ambushed by a group of archers led by a named Elven Woman boss. In my game she dropped a Grandmaster rune.
