Should I romance a character in ME1 and then stay with them only during ME2, or go with no one in ME1 and pick someone up in ME2? What do you all suggest?

It really depends on you, if you want to get the achievement or not.
But if your a male shep then I'd say hold of if you'd like.
Female shep I say either go Kaidan or Liara, which is again up to you.

If any of the female LIs for ME2 strike your fancy, but you'd rather not deal with the emotional fallout of cheating on them, stay single.
If emotional fallout = awesome, romance one of them and then get yourself primed for some lovin' in ME2.
If you'd rather romance Liara or Ash, do it.

I'm in the middle of doing that right now, actually...
The things I'm willing to do for a romance that isn't even confirmed. What the hell.

Haha, which romance is that? Something happened to my MainShep's LI too, but it was for story/drama reasons more than anything. It seems bittersweet.
Anyway, best I can say is play through the game and see if any of the romance options click with you. If you're aware that you may be tempted by another in ME2 then weigh whether you want to deal with the aforementioned potential fallout.
Of course you can import the same Shep twice for ME2, so you can continue the romance (should you pursue one) and do another run where you stray. Up to you.

Play the way you're supposed to (IMO), if one of the potential love interests seems like someone your Shepard will fall for, go for it. You don't need to do a romance just because you can, do what feels right for you or your character. You should also ignore any potential ME2 love interests, remember, your Shepard doesn't know about them.

Play the game how you want to. Do what you feel. I played the game multiple times. My 1st play thru I treated characters in the game as I would've in real life
