There are endless ways to start a business or just work for someone.
Mages could do any job a normal person could.
Normal people don't earn enough money to become merchants while still keeping up with their living expenses. They usually get luck and find a way to make some coin quickly, or they inherit the money. There is also apprenticing and rising up the ranks to overthrow the original owner of the business, while learning all their secrets, but that usually takes years so it's not a immediate revenue stream.
