Okay, so just what all does Arcane Warrior sub for Strength with Magic?  Everything? Intimidation checks, Attack modifier, weapon damage, equip prerequisites?  Or just damage and equip prerequsites?

I've got a twohander for the secondary weapon (so the wizard is not so squishy), and it seems my character seems to miss a lot sometimes...

It subs Strength for Magic for the purposes of equip prerequisites and damage, and you get a bonus to attack by picking the second spell in the tree. I'm not sure if that last bonus scales with spellpower.

Yes, a regular melee arcane warrior's attack rating ends up lacking a bit; so throwing a few points into dex, having Miasma sustained, and stuff like Song of courage, Heroic Aura, Rally helps somewhat. As already mentioned, your magic score won't increase your attack rating.

Also, is there any way to see what n Arcane Warrior's attack rating is? It's replaced by Spell power on the stats screen on account of being a Mage.

I think it is not shown anywhere in-game. You can calculate it yourself if you are interested.

As per the wiki,

Attack rating = 61 + 1/2(STR + DEX - 20) + Bonuses from gear, skills, talents, spells
