Which 'hidden' details in the trilogy did you like best?

I really liked the small notice underneath the Nos Astra Shuttle Schedule at the Taxi-Stand at Illium stating that "due to security advisories flights to human colononies have been cancelled untill further notice" above which it says that flights to Elysium, Mindoir and Shanxi are Cancelled.

I loved that sequence myself. I like to think that, when the Reapers came, that C-Sec officer successfully got her off the station and to safety. I think he's my favourite 'ordinary' hero in the trilogy...

I also liked the various planetary codex entries. I remember reading the ME1 codex entry about Leviathan a couple years ago and I never imagined they would actually build an elaborate story off of it.

I also like it whenever the squadmates you take to a mission whom aren't essential get some additional unique content; it's always a nice little touch. Stuff like taking Zaeed to recruit Archangel, Legion to the Migrant Fleet, Javik to Thessia, EDI to retake the Normandy, that sort of thing.
My favourite is actually if you take James and Wrex to retake the Normandy; the game acknowledges that neither of them are able to hack the airlock door, so it has a unique scene just for the two of them where Wrex opens the door by blasting the control panel with his shotgun.

Yes it is and there is unique dialoge that accompanies it from the quarians and the council. Though it does make the whole sequence slightly awkward during the trial.
You also get longer and different conversations with Legion in the AI core since all the characters change their conversations after major missions or loyalty missions. Most people don't get all of Legions dialog because they just jump right to his loyalty mission so that they can save the Normandy crew (since you can't do more than 1 mission before they start dying off). If you have several loyalty missions left or other missions, talking with Legion between them makes his character far more fleshed out.

Never noticed that corellation until you mentioned it. That was really neat.
Related to this, I also thought it was ironic that the turian and asari couple (standing near where you recruit Diana Allers) mentions that there isn't any communication allowed.....and then Shepard has to go fix the communications tower at the start of othe Menae missions :-)

If you play on PC you could use gibbed save editor to put him in the game early. along with Tali,Samara,and Thane

What I meant by sad was her mother and father don't make it to the refugee camp. The whole reason for her talking to the C-Sec Officer, initially, was to check and see if her parents' ship afrrived.

- In ME3 you learn that the human customer and salarian are actually arguing about a frakkin' toaster oven (my God, the lulz I got from that).
- In ME1, I quickly learned that "UNC Mission" was actually code for "Dead bodies and loot," lol.
- Punching the pyjak in ME2 was hilarious.
- Miranda's personal info on the Shadow Broker's terminal O_o
And last, but certainly not least:

My favorite easter egg is when one of the Avina terminals in ME1 is talking about physics and mentions how things can't be created out of thin air or be sent from one place to another instantly (referring specifically to Star Trek's replicator and transporter technology).

I wish I did lie, but this was far too cool to not remember (because I'm a huge Trekkie). In fact, It's so obscure that after the first time I got it (ironically on my first play through ever of ME1), I've had trouble finding which Avina terminal on the Citadel actually has this line of dialogue. Though I did find it a second time, I still can't remember which one or how you bring up the dialogue.
