Did anything in particular that got mentioned/implied in the series but not shown strike your fancy? (Not necessarily "should have been in one of the games"... just cool to see)
The one that keeps springing to mind for me is elcor infantry in action, bearing heavy weapons on their backs.
Things that were just mentioned/implied offhand but would've been cool to see

Pretty much the battles hinted at through codex that we missed - Batarians fall, Ilium, shadow broker ship destruction etc as well as seeing the deaths of certain characters you met in passing during trilogy.

Yep, if we're going for historical (recent or otherwise) battles then the First Contact War looms large, too.
